Ingredients
4 tbsp olive oil
1/2 onion, finely chopped
2 ripe tomatoes, grated
4 eggs
80g Sandorini Feta, crumbled
Salt & freshly ground black pepper to taste
Preparation
1. Heat the olive oil in a skillet over medium heat.
2. Add the chopped onion and sauté until softened.
3. Stir in the grated tomatoes and cook until the sauce thickens.
4. Lightly beat the eggs, then add them to the skillet, stirring gently until the eggs are soft and fluffy.
5. Crumble the Sandorini Feta over the dish and stir it in to melt slightly, creating a creamy, flavorful texture.
6. Season with salt and freshly ground black pepper to taste.
